100% Aligoté from 90-year-old vines, grown organically and planted on clay soils. Manual harvest and natural vinification: direct pressing and transfer into barrels right after pressing, so fermentation in barrels without settling of the lees. Aged for 24 months in old barrels on fermentation lees, in a reductive environment (= a space with little oxygen). Bottled on the estate without fining or filtration, without added sulfites.
