100% Barbarossa from biodynamically farmed vineyards (the entire estate has been certified since 2000), planted on granitic sands and harvested by hand. Vinification: direct pressing of the whole clusters, settling after 24 to 48 hours at cold temperatures, fermentation in 12-hectoliter wooden casks, no malolactic fermentation. Aged for 12 months on total lees, then 3 months in stainless steel tanks after blending the best lots. Bottled at the estate after light filtration and sensible use of sulfur.
