Gamay from vines labeled by Nature et Progrès, planted on granitic soils. Manual harvest, respect of the whole bunch in order to preserve the indigenous yeasts. Natural vinification without inputs: whole clusters, two weeks of semi-carbonic maceration, pressing, short aging of a month and a half in vats (primeur wine!). Bottled without fining, filtration or any added sulfur.
