100% Grolleau Gris from 40-year-old vines farmed organically and planted on silty-clay soils, from a one-hectare parcel. Hand-harvested and naturally vinified. 20% of the harvest is destemmed and macerates for 4 weeks, while the remaining 80% macerates as whole clusters for 3 weeks. After pressing, the juices are blended and aged in fiber tanks. Bottled in April 2023. Unfined, unfiltered, and with no added sulfites.
