100% Malbec from 40-year-old vines farmed organically (and following the biodynamic principles), planted on clay-limestone soils, this cuvée was made thanks to grapes bought from Château Tire Pé. Harvested by hand. Total destemming, followed by 3 weeks of maceration with only a few pump-overs, then pressed and aged for 13 months in three types of amphorae (Jarre, in French) all made in Italy: terracotta, ceramic and stoneware. Blended and bottled without fining nor filtration, with a total SO2 under 35 mg/l.
