100% Gamay from vines grown organically and planted at the bottom of the plot on slightly sandy soils. Manual harvesting and direct pressing: it is a blanc de noirs, aka a red grape variety that was directly pressed to give a white wine. This a natural sparkling wine which, as a fun fact, was finally bottled at 5 a.m.! Aged for 36 to 42 months in bottles on the laths, then disgorged by Henri and his team in early 2026. Unfined, unfiltered, and with no added sulfites. Zero dosage—this is a brut nature sparkling wine.

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
