100% Gamay from old vines planted on decomposed basalt, under a fine black decomposition earth. Manual harvest, 15 days of maceration in whole bunches with some punching down, aged in in stainless steel vats. Not fined, not filtered, without added sulfites.

Henri Chauvet
Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
