A floral Pinot, with notes of rose and iris, enhanced by raspberry and wild strawberry, and a hint of herbs. Elegant and fine on the palate, the texture is once again super beautiful and airy, with a long, floral finish. Decanting recommended.

Pinot Noir from vines planted on two parcels: one with a volcanic soil and a steep slope of more than 30%; the other with an Eastern exposure and blue marl soils. Harvested by hand. Vinification: 10 to 12 days of whole-cluster maceration, with daily pump-overs with a bucket just to wet the marc cap. 12 months of aging, 50% in old 228 and 300-liter barrels, and 50% in new large cask that have gone through very light toasting. Unfined and unfiltered, bottled with a micro-dose of sulphur (1.5 gr/hl).

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
