Thomas Foubert

Thomas Foubert is the winemaker behind Ferme des Confluences, which he took over with the 2023 vintage in the heart of Muscadet, in Saint-Fiacre-sur-Maine. Born to farmers and trained as an agronomist, he has always been passionate about wine. As early as 2006, he was harvesting at La Grange Tiphaine in Touraine. In 2010–2011, he grew around 20 ares of Chenin ‘for pleasure’ and was already making his own wine. He did the same from 2012 to 2014 on a 0.5-ha plot in Muscadet. In 2020, Thomas left his engineering job, moved to the Coteaux du Lyonnais and tried to settle there — but land is hard to come by. He kept training, notably alongside Ferme des 7 Lunes. Thomas and his wife eventually chose to return to their roots in the Nantes area. He took over Pierre-Luc Bouchaud’s estate through a smooth handover, already organic since 2018 — a real opportunity. His first cuvées, produced across 10 hectares, are already very accomplished: fresh, mineral and deep.
