Stéphane Tissot, he's the vigneron who has proven himself time and again, year after year. Stéphane joined the family estate in 1990, converting the vineyards in their entirety over to organics in 1999. Today, his 50 hectares are certified organic by ECOCERT and biodynamic by DEMETER. His has been a relentless, honourable, unblemished career. Stéphane has never rested on his laurels – nor on his beautiful parcels of old vines. Instead, he has continuously experimented and innovated: creating wine in 420-litre amphorae, but also in Qvevri (the famous Georgian 1000-litre amphorae buried to their necks underground), while mastering myriad styles from sparkling wines, to vin jaune, to vin de paille, etc.... The Jura is a magnificent playground where winemakers enjoy a great deal of freedom for folly. And every year, Stéphane embraces natural wine a little bit more. His cuvées without sulphur have proliferated within his vast range of wines. A range that includes some 40 products, when one counts his finesand other fruit marc spirits. At Pur Jus, we thank Stéphane for having opened the doors of his estate to us, for it has become very difficult to find wines from this region which has suffered a series of “catastrophe”vintages.
Achtung! Eine große quille!! Grande finesse, jus très concentré, sur des notes de fleurs blanches, orange confite, épices. Bouche dense et onctueuse, longueur étonnante. Un très très grand Chardonnay Bourguignon... Non, Jurassien.
A magnificent vin de paille, naturally very rich in sugar, with notes of raisins and honey. The palate is fluid, rich and complex. Uncommonly refined texture, and exceptional freshness considering the level of residual sugar!
Vin sec, net et précis, sur des notes d'épices et de curry. La bouche est riche, complexe, aux saveurs de noix, cannelle et pain d'épices. Persistance interminable... La Mailloche est plus sur une rusticité séduisante.
Achtung! Eine kolossal bottle! Great finesse, very concentred juice, with notes of white flowers, candied orange, spices. The palate is dense and smooth, with remarkable length. A very, very great Burgundy – oops – or rather, JuraChardonnay...
