A blend of apples mainly from the cidery's own orchards, grown organically in the small town of Clohars-Carnoët in South Finistère, Brittany. A majority of tart varieties in this cuvée, blending of the juices right after pressing, fermentation with indigenous yeasts, natural foaming, short time in vats. Bottled without fining or filtration, without pasteurization or any added sulfites.

Matthieu Huet runs the Cidrerie de l'Apothicaire, located in Clohars-Carnoët in Southern Finistère, Brittany. This “local kid” had his first career in healthcare, before founding his estate and setting up in earnest as cider maker in 2018. The choice of Clohars is not insignificant: the small town has a great terroir, historically recognized and renowned in Brittany for its ciders....
