100% Pinot Noir from 64-year-old vines, managed in sustainable agriculture and planted on a Premier Cru at 235 meters above sea level, on a slight slope and facing South-East, clay-rich brown soils. Manual harvest in small crates. Vinification: indigenous yeasts, 20% of whole bunches, maceration adapted according to the daily tasting, soft pressing, aging for 12 months in barrels with 15% new oak. 3 to 4 months of blending before bottling at the Domaine, without fining.

David Croix is at the head of the Domaine des Croix, located in the heart of Beaune. Originally from Montlouis-sur-Loire, the young guy knew from the age of 16 that he wanted to make wine, and therefore started a journey to become an oenologist. He went through the viti-oeno diploma in Tours, before leaving for Burgundy where he graduated from the Master of Oenology in Dijon in 2001. He...
