100% Pinot Noir from 52-year-old vines, cultivated in sustainable agriculture and planted on a Premier Cru at 235 meters above sea level on a significant slope, facing South-East. Clayey-sandy soils. Manual harvesting, yields of approximately 40 hl/ha, two successive sortings on the table. Maceration adapted according to the daily tasting, around 30% whole bunches, soft pressing, 15 months of aging in barrels with 15-20% new oak. 3 to 4 months of blending before bottling at the Estate without fining.

David Croix is at the head of the Domaine des Croix, located in the heart of Beaune. Originally from Montlouis-sur-Loire, the young guy knew from the age of 16 that he wanted to make wine, and therefore started a journey to become an oenologist. He went through the viti-oeno diploma in Tours, before leaving for Burgundy where he graduated from the Master of Oenology in Dijon in 2001. He...
