100% Aligoté, selection of old so-called "golden" (doré, in French) plants, vines grown organically and planted by Maxime's grandfather in the 1960s, in the lieu-dit called "Les Lameroses", on the slope, just below Meursault. Manual harvest. Vinification: direct pressing, 48h of settling, barreling therefore fermentations occurred in casks, 13 months of aging in wooden casks with 20% new oak, bottled with just a micro-dose of sulfur.
Maxime Dubuet-Boillot
Maxime Dubuet-Boillot, child of the 1989 vintage and grandson of a farmer from Corberon and a vigneron from Volnay, first turned his back on his family vineyards before finally returning to them for good. Maxime’s career began not in wine but auto racing, working as a mechanic for The 24 Hours of Le Mans. He pursued that passion for 10 years before heeding the call of his winegrowing roots....
