100% Pinot Noir in sélection massale, vines planted in the town of Epineuil, deep clay-limestone soils of the Kimmeridgian. Facing South-West, medium slope. This is a cuvée produced from purchased grapes, certified organic. Manual harvest. Natural vinification without additives: two weeks of maceration of the whole bunches in conical wooden vats. Pumping over and light punchdowns allow a gentle extraction, this is more like an infusion rather than a forced extraction. Aged for one year in Burgundy barrels of one wine.
