A cuvée of Pinot Noir from the estate’s young vines, planted on a clay-limestone soil. The grapes are hand-harvested at maturity. In the winery: whole bunches are placed in vats and begin alcoholic fermentation with indigenous yeasts, followed by a quick, gentle pressing. The wine is neither fined nor filtered, and bottled in Spring 2022 with a micro-dose of sulphur.
