100% Chardonnay from a parcel facing the Château de Rully in the Côte Chalonnaise. The vines are farmed biodynamically, planted on a clayey-limestone soil over gravel, facing the rising sun. Vinification: whole clusters are pressed and cold-settled for about 24 hours, fermentation in oak barrels that have seen several wines in order to preserve purity and minerality, 12 months of aging on lees before bottling.

Emmanuel Giboulot, you’ve probably heard of him by now. He’s the winemaker who became famous for refusing to treat his vines with pesticides, and as a result was convicted and fined in court.
