100% Pinot noir, from vines around 24 years old, grown at the vineyard sites La Grande Corvée de Bully, En Foigerey, and En Bully. Grapes are hand harvested, with very meticulous sorting. Whole bunches undergo alcoholic fermentation with a little cap punching, followed by gentle pressing, and transfer to barrels by gravity. After malolactic fermentation, the wine matures on its lees. Bottled with a micro dose of sulphur. Open 1-2 hours before serving, and may be decanted, if so desired.
