A Pinot Noir from 60-year-old vines cultivated organically and planted on clayey-marly soil on the Les Rugiens vineyard parcel (1.07 ha), located halfway up the hillside to the south of Pommard. The grapes are harvested by hand, with tightly controlled yields and strict sorting of the bunches. Vinification: whole bunches, cold maceration, fermentation at low temperatures, punching of the cap and pumping over, a post-fermentation carbonic maceration, and 23 months maturation in oak barrels, a third of which are new. Neither fined nor filtered.
