This 100% Pinot Noir comes from a parcel of vines planted in 1920 on brown and gravelly clay-limestone soils. In 25 years, the area planted with Pinot Noir around the village of Saint-Aubin has gone from 60% to 15%! Vinification: grapes are harvested in whole bunches then partially destemmed, foot treaded, followed by a gentle maceration, without forcing the extraction, fermentation and maturation in oak barrels that have seen several wines. Neither fined nor filtered, just a micro-dose of sulphur.
