100% Pinot Noir from a 1.15-hectare parcel around 60 years old. Here we are in Fred’s garden, his vineyards in Saint Romain, those closest to his winery. A recent study of the soils here revealed the presence of marls, long considered the exclusive privilege of Montrachet. Organic farming and manual harvest. Natural vinfication: three weeks of maceration in whole bunches, 12 months of aging in egg-shaped concrete vats. Neither fined nor filtered, no added sulphur.
