A blend of Sauvignon Blanc and Sauvignon Gris from a small .4-ha parcel of organically farmed vines planted in the AOC Saint Br... Well, we can’t say where because the cuvée is classified Vin de France, but anyhow, there’s only one appellation in Burgundy that authorises these grape varieties! Manual harvest when very ripe, followed by gentle pressing, fermentation with indigenous yeasts, maturation in amphorae and barrels that have seen several wines. A light filtration for this sunny vintage, just a microdose of sulphur at bottling.
