100% Sauvignon from organically conducted vines and planted on a plot of sand and gravel of 1.1 ha, half of the vines being 35 years old and half being between 3 and 20 years old. Manual harvesting, yields of about 20 to 25 hl/ha. Direct pressing, racking, fermentation and élevage in demi-muids and Burgundy barrels of several wines, 10 months of aging. Unfined, unfiltered, microdose of sulphur added during bottling at the Estate on June 15th 2023.
