A blended cuvée of Sauvignon, Fié Gris and Chardonnay, from organically farmed vines planted on flinty clay soils. Each grape variety represent 1/3 of the blend, the grapes are harvested by hand and the yields are controlled. Viticulture and winemaking are 100% natural: direct pressing, 18 months of maturation is done for 90% in Burgundian barrels and casks that have seen several wines, and 10% in amphorae. Unfined, unfiltered, just a tiny dose of sulfites at bottling, done on the 16th of December 2024.
