100% Pinot Noir from nearly 40-year-old vines, farmed biodynamically and planted on a clayey-limestone loam soil. Grapes are handpicked and mostly destemmed, fermented in open wooden vats for 18 days, with some pumping over and traditional punching of the cap. Next comes the blending of free-run wines and first press wines, settling of the must, and racking into barrels. Matured for 12 months in barrels that have seen three wines. Bottled at the estate with a low dose of sulphur.

Emmanuel Giboulot, you’ve probably heard of him by now. He’s the winemaker who became famous for refusing to treat his vines with pesticides, and as a result was convicted and fined in court. The estate was inherited from his father who had already converted to organic viticulture in the 1970s. Besides his 10 hectares of vines, the vigneron continues to farm 80 hectares of grain.
