100% Chardonnay from 30-year-old vines farmed organically in the communes of Vézelay, Saint Père and Tharoiseau. The cuvée represents a diversity of soils, being a blend of all the estate’s plots of Chardonnay. The grapes are harvested by hand, with careful sorting in the vineyard. Vinification: whole grapes are direct pressed in a pneumatic press, followed by natural settling by gravity, 10 months of maturation on the lees in vats. Lightly filtered with diatomaceous earth, and the wine is bottled without fining, and just a microdose of sulphur.
