100% Vermentino from vines planted on clay-granitic soils, with south and northwest exposures, in a hot, windy climate. Hand-harvested with sorting in the vineyard and cellar. Whole-cluster direct press, light settling, each parcel vinified separately. Fermentation in large Stockinger casks (no new oak) for three weeks, then aged 6 to 9 months on fine lees, without stirring of the lees. Light filtration before bottling at the Domaine, timed with a good moon in line with the biodynamic calendar.

Yves Canarelli took over his grandfather’s vines in 1993. In 20 years, he has shifted his viticulture over to biodynamics, and reintroduced ancient grape varietals like Cargaghjolu Nero, which nearly went extinct in the 1960s.
