Kakhuri Mtsvivani, a white grape variety that was replanted about ten years ago around the estate in Signagi, Kakheti, in eastern Georgia. The goal is to highlight the incredible biological diversity of this historic winemaking country. Natural, traditional vinification: whole bunches are placed in qvevris — clay amphorae lined with beeswax and buried underground — for fermentation and maceration. Once the lees and stems have settled, only the clear wine is drawn off for bottling. Unfined, unfiltered, and with no added sulfur.

All of Pheasant’s Tears wines are imported into France by SARL Clos du Tue-Bœuf.
