100% Pinot Noir from sustainably farmed vines, hand-harvested in early October at perfect ripeness. Strict sorting of the grapes in the vineyard and at the winery, on table, to ensure healthy berries. Vinification: total destemming, one month of maceration with punch-downs and pump-overs, pressing, slow fermentations with indigenous yeasts, aged on fine lees in French oak barrels for about one year and a half. Bottled at the estate without fining or filtration.
