A cuvée produced in collaboration with Francesco de Filippis of the Cosimo Maria Masini estate in Tuscany. 100% Vermentino from vines cultivated biodynamically and planted on a clay-limestone plot rich in fossils and shells. Harvesting is done by hand, and the grapes are then received at the winery by gravity. Natural vinification: whole grape bunches macerate for four days, with indigenous yeasts, followed by 9 months of maturation in 400-litre amphorae. Bottled without fining, filtration or added sulphites.

Fred bought Domaine de l'Écu in 2010, with its perfect soils cultivated organically since 1972, then certified biodynamic by DEMETER in 1998. He’s been collaborating with Guy Bossard since 2014, the master of Muscadet. The pairing is simply miraculous. Fred, a novice at winegrowing but an unparalleled taster, knows exactly what he wants and what he intends to do for wine in the Muscadet....
