100% Macabeu from organically conducted vines planted on alluvial terraces, on the site of La Made, near Narbonne. Manual harvesting. Vinification: direct and slow pressing, slight settling for 12 hours. Beginning of fermentation in stainless-steel tanks, then the wines go in casks of several wines in order to finish the alcoholic fermentation. Daily stirring for a month. Élevage for 10 months on fine lees, in barrels. Bottled without fining or filtering, zero added sulfites.
