100% Carignan, sourced from the commune of La Livinière in Languedoc, with vines farmed organically and hand-harvested by Henri and his team. Vinification in Boudes, Auvergne: three weeks of whole-cluster maceration in large stainless steel tanks, with part pressed directly. Only bucket pump-overs, gentle pressing, aged 18 months in old 228L barrels. Unfined, unfiltered, only 1 g/hl of sulfur added at bottling.

Henri Chauvet, child of the 1987 vintage, is a new winemaker based in Boudes in Auvergne. After quitting his job in insurance banks, he got his viticulture and oenology diploma, and trained alongside Jérôme Bressy in Rasteau, then with the legendary Thierry Allemand in Cornas.
