100% Pinot Noir from organic vines planted in the Aude region, purchased from growers who share the same values. Hand-harvested, the grapes are brought back to Burgundy to be vinified naturally: total destemming, two weeks of maceration, gentle pressing, 8 months of ageing in stainless steel vats. Bottled at the estate in Spring 2022 with a low dose of sulfur.

Emmanuel Giboulot, you’ve probably heard of him by now. He’s the winemaker who became famous for refusing to treat his vines with pesticides, and as a result was convicted and fined in court.
