A blend of 40% Syrah, 30% Carignan and 30% Macabeu, from parcels in the Pech-Redon area, on a terroir of alluvial terraces on the bank of the La Palme's pond. The estate is certified organic. Manual harvest in small crates, only in the morning. Vinification: direct pressing, light settling of 12 hours to keep the substance, fermentation and maturing in stainless steel vats on lees for 6 months. Bottled at the beginning of Spring, without fining or filtration, just a tiny pinch of sulfites (with total SO2 at 10 mg/l).
Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea.
