Melon de Bourgogne from old vines grown organically, planted in 1945 and 1970, on a small 65-acre plot at the top of the Gras-Moutons hill, which is very well ventilated and has gneiss soils typical of the Monnières-Saint-Fiacre Muscadet Cru. Hand-picked grapes of superb quality and natural vinification: direct pressing, fermentation and 9 months of aging in stainless steel vats, fiber vats and underground vats, on fine lees. No malolactic fermentation. Bottled without fining or filtration, just a micro-dose of sulfur.
Thomas Foubert
Thomas Foubert is the winemaker behind Ferme des Confluences, which he took over with the 2023 vintage in the heart of Muscadet, in Saint-Fiacre-sur-Maine. Born to farmers and trained as an agronomist, he has always been passionate about wine. As early as 2006, he was harvesting at La Grange Tiphaine in Touraine.
