Floral, complex and perfumed nose, with bergamot, white-fleshed fruits and honey — that Muscat-like touch really comes through. On the palate, the maceration is spot on, keeping things pure and straight, with nice volume and a long finish.

Blend of 50% Melon de Bourgogne (vines aged 10 to 40 years old on gneiss and granite soils) and 50% Chardonnay muscaté (planted in 2018 on gneiss soils in Saint Fiacre), grown organically and harvested by hand. Natural vinification: total destemming of both grape varieties, co-maceration in a small stainless steel vat for 6 days. Racking and pressing, alcoholic fermentation is already complete at this stage. 9 months of aging in fiber vats, stainless steel vats, and underground vats. No fining, no filtration, just a micro-dose of sulfur.

Thomas Foubert is the winemaker behind Ferme des Confluences, which he took over with the 2023 vintage in the heart of Muscadet, in Saint-Fiacre-sur-Maine. Born to farmers and trained as an agronomist, he has always been passionate about wine. As early as 2006, he was harvesting at La Grange Tiphaine in Touraine.
