Lapsus is actually a blending mistake that turned out great! This cuvée was supposed to be a 100% Gamay, in the end it is 2/3 of Gamay and 1/3 of Côt that has been bottled, Olivier inverted his vats! The vines are grown organically, planted at the top of the hillside on light soils: flinty sandy clay and flinty gravels. Separate vinification of the two grape varieties: 12 days of maceration for the Côt, one week for the Gamay, aging in vats. Bottled without fining or filtration, micro-dose of sulfur.
