100% Grolleau, from century-old biodynamic vines, planted on a clay-loam terroir. Harvested by hand using crates, and yields of 25 hl/ha. Vinification: 100% destemmed grapes macerate for about 20 days, without excessive extraction, then are gently pressed in a pneumatic press. Matured 14 months on fine lees, 30% in 228-l barrels that have seen several wines, and 70% in casks on fine lees, followed by blending and 6 months in stainless steel vats. Bottled at the estate according to the biodynamic calendar, without fining or filtration.
