Palsambleu - 2023 - Les Justices

Sophie & Clément Maire Kurdziel

100% Cabernet Franc from vines grown organically and planted on the very famous plot of Les Poyeux in Chacé, which shows clay soils over limestone. Manual harvest in small crates of 10 kg. Vinification: total destemming, 45 days of maceration without forcing or pushing the extraction, then one year of aging in 500-liter barrels that have seen several wines, one year of maturation in bottles. Bottled at the estate in September 2024 without fining or filtration, only 20 mg/liter of total SO2.
