Pure expression of the Cabernet Franc, carried by notes of cherry, leather, very fresh vegetal notes. Palate: thin tannins, velvety mouthfeel, long and precise finish. Worth decanting, and ideally to be opened two hours before tasting.
100% Cabernet Franc from 40-year-old vines, grown organically and planted on clay-siliceous soils, on a South-facing plot. Manual harvest. Vinification: total destemming, sorting of the berries on a sorting table, cold pre-fermentation maceration, approximately three weeks of maceration with pump-overs and punch-downs, one year of aging in casks and demi-muids barrels that have seen two to three wines. Bottled at the Estate without fining or filtration. Maturation in the bottle at Bel Air’s, in old caves carved into the tuff.
