Le Cabernet Franc - 2020 - Les Cailloux du Paradis
Claude Courtois

100% Cabernet Franc from organic vines over 70 years old, with vine shoots from three to seven meters long. Natural winemaking "the same way I've done it for 47 years": hand-picking in several passes to obtain perfect ripeness, "and then I keep it as simple as possible", pressing, several rackings to obtain a clear wine, two years of aging in barrels that have seen several wines.
