Viognier from 60-year-old vines planted on the parcel “Le Biez” at the lieu-dit La Combe, in the commune of Saint-Pierre-de-Boeuf, on granite soils at 310 meters altitude with a 10% slope. South-facing exposure. Manual harvest, picked later on September 22, with sorting both in the vineyard and on the table. Direct pressing of whole clusters, indigenous yeasts, fermentation in foudres and 350-liter barrels, 9 months of aging in 17 hl foudres and demi-muids. Bottled on August 23, 2022.
