100% Viognier from 32-year-old vines, planted on the lieux-dits “Veauvignière” in Malleval and “La Combe” in Saint-Pierre-de-Boeuf, on granitic soils, across a total vineyard surface of 4.5 ha. Manual harvest, with sorting in the vineyard and again on the table upon arrival at the cellar. Direct pressing, indigenous yeasts, fermentation in 350-liter barrels and in casks, 9 months of aging on fine lees in barrels.
