Blend of 80% Mondeuse and 20% Jacquère cuvée, produced from purchased grapes, these vines are organically grown and planted in the Combe de Savoie vineyards. Manual harvest in small crates, controlled yields. Natural vinification: 10 days of maceration, soft pressing, six months of maturation in demi-muids that have seen several wines. Bottled in April 2021 without fining, filtration or added sulphur.
