A 100% Malbec cuvée made from 45-year-old vines in conversion to organic viticulture and planted at an altitude of 330 metres on an east facing slope of red clay soils several metres deep, over Kimmeridgian bedrock. Grapes are picked by hand with small crates, destemmed, and transferred to vats by gravity, followed by a maceration for 30 days with indigenous yeasts. Matured on lees for two years in a single cask. The wine is neither fined nor filtered, with just a micro-dose of sulphur at bottling.
