100% Malbec from vines between 29 and 44 years old, farmed organically and biodynamically, and planted on old red clay, limestone and marl soils at an altitude of 340 metres. Manual harvest with small crates, transferred to vats by gravity, maceration part in whole bunches and part destemmed, for short macerations of 6 to 8 days. Matured on lees in concrete and stainless steel vats and barrels that have seen a few wines. Unfined, partially filtered, with just a micro-dose of sulphur at bottling.
