100% Malbec from 40-year-old vines, farmed organically and planted on a high-altitude limestone plateau rich in iron ore. Hand-harvested with low yields around 15 hl/ha. Natural vinification: fully destemmed, fermentation in two small open vats, 15 days of maceration with one punch-down at the start and light daily pump-overs. Totally crazy and unprecedented ageing: in two stone vats of 10 and 20 hl, carved directly from the limestone rock in the northern part of the Lot (french department)! No added sulphites.
