An artisanal, organic gin, distilled in a pot still and crafted with botanicals from Gilles Victors’ lush garden, home to no fewer than… 180 pepper plants! This is a single-shot gin, distilled in 300-liter batches — only the heart of the distillation is kept, then slowly brought down in alcohol with pure spring water. Five O’Clock is a nod to the legendary “Five O’Clock teas” at the Palmer Hotel during American Prohibition, where gin was secretly served… in teapots!
Maison Victors is a small organic distillery based in Vacquiers, just outside Toulouse, founded by the one and only Gilles Victors back in 2017. After a wildly eclectic journey, this slightly mad former master knife-maker — known for crafting blades that could fetch tens of thousands of euros — decided to drop everything… all for the love of whisky! Obsessed with his favourite spirit, he started out by attending a few masterclasses, before diving headfirst into the world of pot stills. Gilles trained in Cognac, then headed up to Scotland, where he gained solid experience — notably at Springbank — honing his skills in traditional distillation. During his time in Scotland, he also fell for craft gins, discovering the category during a fateful gin-soaked night out. Back in France, Gilles designed his own stills and built the distillery from scratch, entirely in his image. Maison Victors is artisanal, organic, and deeply ecological — one of the finest distilleries in France. Every detail is considered: these are spirits as works of art.
