Vines cultivated as naturally as possible, with a top-secret grape variety that was once planted in Sologne before 1863 — Claude Courtois prefers not to disclose it. Natural winemaking “done the same way for 47 years”: hand-harvested in several passes to achieve perfect ripeness, gentle pressing, multiple rackings to obtain a clear wine, followed by two years of ageing in barrels that have seen several wines and two additional years of bottle maturation. Unfined, unfiltered, and with no added sulphites.
