100% Pinot Gris from organically grown vines, which are planted among the estate's Chardonnay vines, on the parcel of Manon's cuvée. Separate harvests in order to make a cuvée in its own right. One month of maceration of the whole bunches, soft pressing, aging for one year in a very small stainless steel vat. Bottled without fining or filtration, zero addition of sulphur, two years of maturation in bottle in Recrue des Sens cellar. Very VERY rare cuvée.
